▢10 large apples we use 5 Gala and 5 Honeycrisp ▢16 cups water ▢¾ cup sugar ▢1 tablespoon ground cinnamon ▢1 tablespoon ground allspice ▢6 cinnamon sticks
Divide each apple in half and extract the interior. Add water to apple segments in a large stockpot.
Add cinnamon, allspice, sugar, and cinnamon cloves to the mixture. Reduce to a simmer over medium heat, then continue simmering for two hours while covered with a lid.
After vigorously stirring, strain the apple mixture with care through a fine-mesh sieve.
Solids extracted from the sieve are discarded. Re-strain the cider through a cheesecloth-lined strainer.
Served tepid, or chilled for one to two hours in the refrigerator.
