▢2 (15-ounce) cans black beans, drained and rinsed ▢1½ cups light sour cream ▢4 ounces cream cheese ▢1 (4-ounce) can green chilies ▢¼ cup salsa ▢1½ – 2 cups Mexican cheese ▢fresh cilantro, chopped ▢grape tomatoes, chopped ▢olives, sliced
Turn the oven temperature to 325°F.
In a food processor, combine black beans, sour cream, cream cheese, green chiles, and salsa until smooth. After incorporating one cup of cheese, transfer to a casserole dish.
Add an additional 1/2 to 1 cup of cheese on top. Bake while covered with foil for fifteen minutes.
Remove the foil and continue baking for 15 minutes. Add olives, diced tomatoes, and cilantro to the top.
