Preheat the oven to 375 degrees Fahrenheit and line muffin cups with paper liners. Combine the honey, yogurt, eggs, oil, milk, and vanilla in a large mixing basin until thoroughly combined.
The pulverized bran and 1 cup of the rolled oats should be added. Provide a 10-minute bath. Combine the flour, baking soda, baking powder, cinnamon, and salt in a separate basin.
Mix in the moist ingredients until thoroughly combined; the resulting batter will be quite thick. Blend in the apple gratings. Before filling the muffin tin, scoop in the batter until nearly full, as they rise very little.
Combine the remaining oats and brown sugar, then scatter on top. Bake until a toothpick inserted into the center of each muffin emerges clean, approximately 15 to 20 minutes. This equals 16.
Serve warm with butter or jam. We just refrigerate these and warm them up in the microwave for 10-20 seconds in the morning.
