Heat olive oil in a large pot over medium heat
Add diced onion, carrots, and celery. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
Add minced garlic and dried thyme, and cook for an additional 1-2 minutes
Pour in chicken or vegetable broth and bring to a simmer.
Add white beans and diced ham to the pot. Simmer for 10-15 minutes, allowing flavors to meld together.
Season with salt and pepper to taste.
Serve hot, garnished with chopped fresh parsley if desired.
