Quinoa Salad Recipe


1 cup of quinoa, rinsed 2 cups of water or vegetable broth Assorted vegetables (bell peppers, cucumbers, cherry tomatoes, red onion, etc.), diced 1/4 cup of chopped fresh parsley or cilantro Juice of 1 lemon 2 tablespoons of olive oil Salt and pepper to taste

In a medium saucepan, bring water or vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15-20 minutes, or until liquid is absorbed and quinoa is fluffy.

In a large bowl, combine cooked quinoa, diced vegetables, and chopped parsley or cilantro.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the quinoa mixture and toss to combine.

Serve chilled or at room temperature.
