Preheating the oven to 350 degrees Fahrenheit. Spray two large loaf pans (5 x 9 inches) with cooking spray and reserve.
Cream together butter, 2 cups sugar, 2 teaspoons cinnamon, and salt in a large basin until light and airy. Incorporate the eggs and mix thoroughly. Once combined, whisk in the vanilla and sour cream.
Baking powder and flour are combined in a separate receptacle. Combine with the moist ingredients until thoroughly combined.
Stir cinnamon pieces into the batter. Pour batter into the prepared loaf molds in an even distribution.
In a bowl, combine the remaining 1/2 teaspoon of cinnamon and 3 tablespoons of sugar; then, distribute this mixture over the batter in each loaf pan.
Bake for 40 to 45 minutes, or until a toothpick inserted into the center of the pans lined with foil comes out clear. Once cooled, remove from the pan and cut into slices.
