4 cups cubed sweet potatoes ▢½ cup sugar ▢2 eggs beaten ▢½ teaspoon salt ▢4 tablespoons butter softened ▢½ cup milk ▢½ teaspoon vanilla extract ▢½ cup brown sugar ▢½ cup all-purpose flour ▢3 tablespoons butter softened ▢½ cup chopped pecans ▢2-3 cups mini marshmallows
Preheat oven to 325°F.
Boil sweet potatoes in water in a medium pot over medium-high heat until tender, then puree.
Combine the mashed potatoes, sugar, eggs, salt, butter, milk, and vanilla extract in a large basin until smooth. Pour into a 9-by-13-inch baking dish that has been greased.
In a medium basin, combine the brown sugar and flour, then cut in the butter until the mixture is coarse. Combine pecans with the sweet potato mixture and scatter the mixture on top.
Proceed with baking for twenty minutes. Bake for an additional 10 to 15 minutes, or until marshmallows are faintly browned.GREATLY ENJOY!
